Step 1
Mix the yeast, sugar, warm water, and flour in a bowl, cover it with a damp paper towel, and let it sit for 10 minutes.

After 10 minutes, add the remaining flour (1 and 1/2 cups), salt, and olive oil to the dough. Take a large wooden spoon and roughly mix the dough ingredients.

If you don’t have a mixer, knead it by hand after greasing it with oil on a clean surface coated with oil for 8-10 minutes until it becomes smooth.

Then divide the dough into 10 dough balls (each weighing about 62-65 grams). Cover it with a damp cloth and let it rest for 10 minutes.
After 10 minutes, sprinkle a little flour on the kneading board and roll out the dough. Each dough ball should be rolled until it reaches about half an inch thick. -
Step 5
Once the dough is rolled out, add a small amount of shredded mozzarella cheese around the edges. For the inner filling, use only mozzarella cheese. Begin folding the dough over the shredded mozzarella by pressing to seal the edges and press the top and bottom of the dough.

Preheat the oven to 218 degrees Celsius.

Place the shaped dough onto a buttered baking sheet.

Brush the pastries with egg wash and garlic butter in the middle of the dough. Fill the center with the cheese filling. Bake for 25 minutes.
