Thoroughly wash the potatoes, create incisions, wrap them in foil, and bake in the oven until fully cooked. If boiling, ensure they’re well-dried, peel, and then mash them.

Combine the mashed potatoes with egg, cheese, and salt. Blend using a fork, then add the flour and continue blending until mixed.

Dust a clean surface with flour, place the dough in the center, fold it, cover with plastic wrap, and let it rest for an hour.Divide the dough into four parts. Roll each into a long cylindrical shape.

Cut the dough into uniform pieces, about 1.5 inches, press each against the back of a fork, then fold.

Drop the pasta pieces into boiling salted water until they rise to the surface, then drain.

Toss the cooked pasta in the butter sauce, plate it, and garnish with Parmesan cheese and parsley.

To prepare the butter sauce:Place the butter and oil in a pan over heat, then add the garlic.

Add the basil leaves, parsley, lemon zest, Italian seasoning, stir quickly, then turn off the heat.
