Step 1
Mix the meat and onions with salt and black pepper until the moisture evaporates.

Rub the flour with ghee and oil, then add the egg, salt, yeast, bread spices, and gradually add water until the dough becomes firm. After half an hour, spread the dough in a buttered tray, prick it with a fork, and let it rest for an hour or more. The edges should be slightly raised.

Put the tahini in a bowl, then add the white and black vinegar, bread spices, and garlic. Gradually add water until it reaches a creamy consistency. Add an appropriate amount of the meat mixture.

Fold the edges of the dough and fill it with the meat mixture, sealing it. Then add the rest of the meat mixture on top of the dough, making the meat mixture higher than the dough edges. Brush the dough edges with a mixture of egg and milk, then sprinkle sesame seeds and black seeds on top.

Place it in the center of the preheated oven at 180 degrees Celsius from the bottom for 30-40 minutes, then let it brown from the top at 200 degrees Celsius for 5-10 minutes.
